VEG CUTLET



















potato 1lb
shallots   qrt lb
carrot
green peas 1/4 lb
ginger
garlic
bread crumbs
egg white/ flour

STUFFING

Boil potatoes.
Peal and mash it to firm paste.
Cook the vegetables slightly. 
In a heavy skillet heat the oil and add sliced shallots. When it turns brown add salt, chilly powder, turmeric, ginger garlic paste and gently flapp it. 
Now add the boiled vegetables and mix it properly with mashed potatos.
Make patties of reqiured shape, prefarably oval or heart. The smaller the better. 

Mix egg whites in a bowl and bread crumbs in another.
Dip the patties in eg.g white and then in bread crumbs and deep fry it.. take it when it becomes golden brown.
Serve it with mint chutney or tomato sauce.

Chicken Meow


















Chicken 1 lb
Onion 2
Tomatto 1
Chicken masala 2tsp
turmeric
salt
oil 1tsp
lemon juice/vinegar 1tsp


Cut chicken into small cubes and clean and drain it properly.
Marinate it with vinegar.(just afixer) chilly powder, masala aturmeric and salt. 
Keep aside for 1 hr. ( 1/2 hr will also do). 
Heat oil in a heavy skillet and add the sliced onions into it. Fry them until it turns golden brown. 
Add ginger garlic paste and sliced tomatoes.
Fry it to brown and add chicken masala. Then add the marinated chicken pieces. Keep it closed and cook for 10 minutes. Check salt and add if necessary. 
Keep it in low flame until its dry. Add some butter on to it while serving....


BuTTer Yucca with Cry chicKen

YOU NEED

yucca/tapioca               2 lb
grated cocunut             1cup
red whole chilly            3
mustard                       1 tsp
cocunut oil                   1tsp
salt
pearl onions                  4
butter                           1 tsp

Chop the tapioca into small cubes and soak in cold water for 1 hr. Boil it and drain the water.Keep itaside for a while. Make a mix of cocunut with turmeric and salt.
Seasoning- Heat the oil and add the mustard seeds.Let the seeds sputter and add curry leaves and whole chillies. Add the chopped onions .When the onion is golden add the cocunut mix and tapioca. Mix it thoroughly.Pour over the butter.  .................... Its ready..

ALOO BHAJIA




YOU NEED

Gram Flour 
Potato 2lbs
Oil
Turmeric 1tsp
Salt 1tsp
Chilly powder 1tsp
Onion  1
Green Chilly 3
Cumin seed

Make a smooth paste of flour with water and the spices.Heat the oil in a pan.Slice the potatos. Dip it in the paste. Deep fry until its golden brown. Place it over tissue. Garnish it with sliced onion and fried green chilly..And have it with some hot tea.
